Slow Cooker Pork & Beans

What You’ll Need
- 2 tbsp vegetable oil
- 500g pork shoulder, trimmed of fat and cut into 3cm cubes
- 1 onion, finely chopped
- 3 garlic cloves, chopped
- 1 tbsp paprika
- ½ tbsp hot chilli powder
- 400g tin of chopped tomatoes
- 2 x 400g drained tins of mixed beans
- 2 x 250g cooked grain pouches
- ½ bunch of chopped parsley
- 3 tbsp of soured cream

Method

Season your pork and fry it in half the oil in a pan, until browned

Remove pork from pan, then add the remaining oil and fry the onion, peppers, garlic and add a pinch of salt. Do this until they are all soft, usually it takes ten minutes

Transfer to slow cooker, and add the spices and tomato puree and cook for a few minutes. When ready, add the chopped tomatoes and 250ml of water

Add the pork, season and then leave to cook for desired time. Alternatively, place in an ordinary pan and simmer for two hours

Tip in the beans and simmer for another 30 minutes, by now the pork should be very tender

Heat the grains and serve the slow cooked pork and beans over each potion of grains
