Chicken Parmesan is a classic dish that’s been doing the rounds at family restaurants for some time now. 

A big hit with meat lovers and those who can’t get enough of cooked cheesy tastes, it’s nice and simple to create your own take on the dish at home with a bit of extra crunch. 

This version makes things a little simpler, meaning it’s a hassle-free, delicious way to get some lean protein on your plate. Albeit, with a dollop or two of cheese!

What You’ll Need

  • 2 eggs
  • 100g Parmesan cheese, grated
  • 4 chicken breast halves (skinless and boneless)
  • 120g of bread crumbs (add more to taste)
  • 2 tbsp all-purpose flour
  • 250ml olive oil
  • 50g mozzarella, fresh and cubed
  • Handful basil, fresh and chopped
  • 500g tomato sauce, such as Passata
  • 50g cheddar cheese, grated
  • Salt and pepper to taste

Preheat the oven to 450°F/230°C/Gas Mark 8


Take some heavy plastic sheets or sealable bags and place the chicken breasts between them. Make sure they’re laid on a flat surface. Use a meat mallet smooth-side down to beat the chicken until they are around ½ an inch thick. Season liberally


Whisk up the eggs in a separate bowl. You’ll need these later. Mix up the breadcrumbs and half of the Parmesan in a separate bowl


Sift the flour and sprinkle over the chicken to get even coating all over


Dip the chicken in the eggs and transfer over to the breadcrumbs, pressing and kneading to make sure they’re covered. Keep going until they’re all covered, and leave them for around 15 minutes


Heat up some of the olive oil in a medium-high heated pan. Place the chicken in and cook for up to 2 minutes on each side until nice and golden


You’ll now need to make use of the oven. Place in a suitable dish for baking and top the meat with a small amount of tomato sauce. Sprinkle basil, provolone and mozzarella across all pieces. Add an extra bit of parmesan to finish and drizzle on some oil


Bake in the oven until the meat is cooked through and the cheese is bubbly. This should take around 20 minutes. Serve with a nice salad or potatoes

Use high-quality prepared tomato sauce for a better end result. You may want to omit the basil if using something like Bolognese which already has herbs in

A layer of pesto works as a good basil substitute and also gives a saucier texture

We are generous with the sauce in this recipe, so go slowly and use your judgement if you want a drier result
