Ever wished you could make an entire pie out of a simple burrito?  Now you can.

This saucy Mexican concoction may look like a lasagne on the face of it, but there’s tons of spiciness and cheesy goodness waiting for you to try.  This is no ordinary pie!

You’ll need a tall drink to extinguish after digging into this one – it’s super-spicy. You can serve it up in slices with all manner of toppings, sides and sauces.

What You’ll Need

  • 1 onion, chopped
  • 2 teaspoons of garlic, minced
  • 4 green chilli peppers, diced
  • 1kg ground beef
  • 50g sliced black olives
  • 1 jar of taco sauce or equivalent
  • 12 8-inch tortillas (flour or otherwise)
  • 250g Cheddar cheese or equivalent, grated
  • 1 tin tomatoes (around 400g)
  • 1 can of refried beans (around 400g)

Preheat the oven to 350°F/175°C/Gas Mark 4 (a moderate heat)


Cook the mince in a pan or skillet on medium heat until browned


Add in the garlic and onion and continue to sauté for another 5 minutes


Drain off the fat and add the Chilli peppers, olives, taco sauce, beans and tomatoes.  Stir it all up and reduce on a low heat. You’ll need to let everything simmer for up to 20 minutes


Once cooked, take a casserole dish and spread half of the mixture along the bottom, covering with a tortilla layer. Then more mixture, then cheese.  Repeat until you have made it as thick as you wish


Bake in the oven for up to 30 minutes.  The pie should be browned, bubbling and look absolutely mouth-watering


Remove and serve in slices

Tip 1
With each layer, make it at least 2 or 3 tortilla wraps thick or it can get soggy after baking

It can easily be made vegetarian, using more onion and pepper to bulk it up or your favourite meat alternative. You could even use shredded chicken
Tip 3
It can be frozen. Just cook at about 200°C for 30-40 minutes straight from the freezer for an easy meal
